🌟 Board Member Highlight – Keri Peterson
![]() |
I am happy to introduce to you Keri Peterson, our Board Secretary, in this month’s spotlight.
Keri’s journey with the Miami County Community Foundation began with her dedication to both community and service. Having worked at First Option Bank for 18 years, she knew very well the importance of strong community ties. It was her experience at managing private foundations and scholarships that led her to the MCCF.
“I didn’t initially have an interest in managing the operational side of things,” Keri admits. “But when new board members were being interviewed, they felt my experience could bridge the gap between operations and management. I’m so glad they did – it’s been incredibly rewarding to serve.”
Realizing the unique impact she could have on Miami County, made Keri’s connection to the Foundation grow even stronger.
“I love how this community supports each other,” she says with pride. “I’m able to help others in a meaningful way through the Foundation. It’s about making sure the needs of this place, where I’ve spent my entire life, are seen and supported.”
Her passion for community service is a bit of a family tradition, often exploring our quirky landmarks like Big Brutus and the Oz Museum with her parents. “We’ve loved Sunflower Summer – it’s a great way to check out the hidden gems in our area, all while supporting local businesses and attractions,” she told me.
It’s great to work with people who are so aligned with you, I believe. Keri’s proud support of mental health initiatives is something we share.
“We’ve been fortunate to work with organizations like Shifting Gears for Regan and Stomp Out Suicide, which are making a real difference in the lives of so many in our community,” she reflects.
Keri is looking forward to seeing how she’ll change the lives of Miami County residents with her work.
“In 10 years, I envision a community where every person has the chance to succeed, contribute, and belong,” she says. “I want to see a place where generosity and opportunity are the standard for everyone, regardless of background.”
I feel like Keri’s dedication, vision, and heart is what we want in Miami County. This future that she envisions is in good hands!
❤️Local Recipe Spotlight
This month’s recipe comes from Cathy Cooper’s kitchen and will envelop you with warm flavors, a perfect addition to your fall table.
This Baked Cream Cheese Spaghetti Casserole is a beloved family recipe that’s been passed down over the years. It’s the perfect comfort food, great for family gatherings or as a dish to bring to a friend’s home. Cathy, a Miami County resident for 36 years, says that “it’s homey goodness”, and how could we not trust her.
If there’s a recipe that mirrors our beautiful rural landscapes, close-knit community and the cozy vibes of Paola… it’s this one.

The Baked Cream Cheese Spaghetti Casserole Recipe
Ingredients:
- 12 ounces of spaghetti
- 1 (26 oz) jar of prepared spaghetti sauce
- 1 pound of ground beef
- 1 teaspoon of Italian seasoning
- 1 clove of minced garlic
- 1 (8 oz) package of cream cheese at room temperature
- 1/2 cup grated parmesan cheese
Steps:
- Preheat the oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat. Stir in the spaghetti sauce and set aside.
- Cook the spaghetti according to package instructions. Drain and place in a large mixing bowl. Add the cream cheese, Italian seasoning, and minced garlic. Stir until the cream cheese melts and the spaghetti is evenly coated.
- Lightly grease a 9×13-inch baking dish. Spread a small amount of meat sauce on the bottom of the dish. Place the spaghetti mixture on top, then cover with the remaining meat sauce.
- Sprinkle parmesan cheese on top of the casserole.
- Bake for 30 minutes, or until bubbly and golden.
- Serve with a side of bread and a garden salad. Enjoy!
